Silas's 3rd birthday is coming up fast and I want to make him a PJ mask themed birthday cake. You know the really cool kind with fondant. I've never worked with fondant before. Especially the homemade marshmallow kind, so I wanted to practice first.

This is how it went.


Pretty much all recipes for marshmallow fondant are the same

1lb of marshmallows

a couple tbsp. of water

a fuck ton of powdered sugar

and plenty of Crisco to grease yourself and your counter tops with.


I clearly didn't read the instructions here. I didn't add nearly enough powdered sugar and obviously didn't grease my hands well enough.

I also ignored all warnings to let the fondant sit double-wrapped on the counter for at least 24 hours before trying to work with it.

Remember how I said I'm impatient?

Cause I am.

I made 3 layers of 6 inch cakes and iced them with Betty Crocker's rainbow chip icing because that ish is the bomb dot com.


When I realized how badly I had jacked it up I was ready to just trash it and try again another day, but I reluctantly kept going and just tried to add some more powdered sugar to the mix and let it sit for a bit... it worked. Mostly.


It was definitely a much thicker, more pliable consistency and it didn't get terribly stuck to me this time. I was able to roll it out and place it over the cake.



I'm not a cake decorator.

It's definitely not perfect, but next time I know I will for sure use enough powdery sugar goodness, I will have the right color gel dye and I will make it in advance.

I also think I may have rolled it too thin making the chips in the icing leave dents in it maybe ill go with homemade buttercream next time. but eh. lesson learned and it was a lot of fun.

The cake tasted delicious. The fondant was gross, but it always is if you ask me.
